How to make mashed potato pancakes in a frying pan

Wash and peel the potatoes. Cut into medium cubes for faster cooking, and rinse under water to remove starch from the root vegetable. Add water and potatoes to the pan, then add salt and cook until the potatoes are completely softened for 10-15 minutes, after boiling.

As soon as the potatoes are well softened, drain the broth. Mash the boiled potato pieces using a potato masher. You should get a homogeneous mass without lumps. Cool the prepared puree to room temperature.

Add one raw egg to the puree mixture, then beat or mix thoroughly with a spatula.

Add a little more than half of the sifted wheat flour to the potato mixture. You can add it in stages so that you do not form unnecessary flour lumps. Mix immediately with a spoon or spatula.

Add ground pepper, salt, vegetable oil. You can flavor the potato dough with different herbs, according to your desire. It can be dried or fresh dill, or parsley. Stir the spices into the potato mixture.

The dough is quite soft and sticks to your hands. Pour the other half of the flour onto the board. Use a spatula to place the ball of dough onto the flour layer. Mix lightly. Cut into 8-10 pieces and work with each separately.

Roll out with a rocker, dusting the countertop with flour. Make it small in diameter, approximately 10-15 cm, so that it is convenient to transfer to the frying pan, since the mashed potato dough is very tender.

Heat the frying pan on fire. If desired, the tortillas can be fried with or without oil, which is what we will do. Fry in a hot dry frying pan until golden brown on both sides.

Potato cakes in a frying pan are ready. Delicious to eat warm or cold. Serve and enjoy your meal!

Description

From mashed potatoes you can make delicious flatbreads according to the Finnish recipe: thin, golden. You can eat it instead of bread with a bowl of soup or a spread of cheese and garlic. You can also roll them into mini rolls, like lavash, with a variety of fillings.

You can cook these potato cakes in the oven or in a frying pan. It turns out an unusual alternative to potato pancakes or zrazy: potato pancakes. True, we thought they were a little dry, but the children devoured them with pleasure :) Especially when warm: as they cool, the flatbreads become less tasty.

Ingredients:

For 10 plate-sized pieces:

  • Medium size potatoes - 5-6 pieces;
  • 1 egg;
  • Flour – 100g + half a glass or a little more for adding;
  • Salt - half a teaspoon;
  • Ground black pepper – ¼ teaspoon;
  • Greenery.

Instructions:

Prepare the potato dough: after peeling the potatoes, rinse them and boil until soft; drain the broth and turn the potatoes into mashed potatoes without lumps. When the puree has cooled to lukewarm, add the egg and spices (salt, pepper). After mixing, add flour. Stir again, pour in sunflower oil and add chopped herbs. Mix thoroughly and the dough is ready!

Now let's dust the table well with flour. Take a portion of dough the size of a large potato and, constantly dipping it in flour on each side, roll it out thinner, to a thickness of 2-3 mm. Applying a plate to the cake, cut out round flatbreads in shape. Or rectangular, or square (to fit more on the baking sheet), or even in the shape of hearts!

After wrapping the cake on a rock, we transfer it to a baking sheet covered with high-quality parchment, greased with sunflower oil, or simply sprinkled with flour.

Place in the oven, preheated to 200-210C, and bake until golden. The baking time depends on the thickness of the cake: if 1-2 mm, then 10 minutes is enough; if 2-3 mm, then 15-20 minutes. Thick flatbreads turn out softer, and thin ones turn out crispy, like chips.

How nice it is to buy fluffy and soft bread in the store! However, preparing such bread at home is by no means easy: the dough did not rise and turned out tough, or even not baked at all. However, we will try to bake a beautiful and fragrant flatbread, and also add potatoes to it. Then our dough will acquire a unique aroma and will be very airy, light and satisfying. Potato cakes are an excellent addition to first and second courses; You can use them to make delicious hot sandwiches.

Recipe Information

Cuisine: Scandinavian.

Cooking method: boiling potatoes, baking in the oven.

Total cooking time: 4 hours 30 minutes

Number of servings: 3 .

Ingredients:

  • potatoes – 2 pcs.
  • milk – 150 ml
  • refined sunflower oil – 2 tbsp.
  • wheat flour – 400 g
  • dry yeast – 2 tsp.
  • sugar – 1 tsp.
  • salt – 2 tsp.
  • ground black pepper - a pinch.

Cooking method

  1. Peel two medium potatoes and wash under running water. Place a pan of water on the fire, add a little salt and cook the potato tubers until fully cooked. Since we need mashed potatoes to prepare the potato dough, we mash the boiled potatoes using a mortar.
  2. The next step will be preparing the dough itself. Add yeast and sugar to warm milk. Leave this mixture for 5 minutes for the yeast to react.

  3. Sift the flour using a sieve. Add the sifted flour to the yeast liquid.
    Add cooled potatoes, eggs, and sunflower oil to the total mass. You can pepper the mixture and add salt.

  4. Now we need to knead the dough. This should be done for at least fifteen minutes so that it is saturated with oxygen and our cakes are soft and airy. It is very important to strictly follow the amount of flour indicated in the recipe. Do not hide the fact that the dough will be sticky and may be difficult to knead. In this case, it is better to lubricate your hands with sunflower oil. Roll the dough into a ball and leave it under cling film for two hours.

  5. During this time, the yeast will take effect, and the dough will become even larger and fluffier.

  6. Divide the finished dough into three equal pieces. Using a rolling pin, roll the pieces into small cakes.
    Place the cakes on a baking sheet and again leave them to stand under a towel for 45 minutes. This point should never be skipped, otherwise the cakes will not rise and will remain flat.

  7. Before baking, the flatbreads should be greased with vegetable oil.

  8. After this, preheat the oven to 220 degrees and bake the cakes in it for 10 minutes. After this time, reduce the temperature to 180 degrees and bake the cakes for another 10 minutes.

  9. As you can see, potato cakes take quite a long time to prepare, but the result is worth it!
  10. It is unlikely that such delicate cakes will ever get boring. However, if desired, you can diversify the flavor palette by adding other ingredients to the dough: pieces of ham, mushrooms, grated cheese, chopped dill, fried onions. Garlic sauce is also suitable for these potato cakes. Experiment and enjoy. Bon appetit.
