Meatloaf with eggs in the oven is not only a tasty and nutritious dish. It will attract the attention of all guests due to its appetizing appearance. At first glance, it may seem that preparing such a dish is difficult and you need to buy a lot of ingredients. But, despite the long description of all preparation steps, to obtain delicious result it won't take much time. And most of the products used are always in the refrigerator of every housewife.

In this recipe we suggest you prepare chicken fillet meatloaf with a layer of minced pork, strips of crab sticks and boiled carrots. Wrap whole boiled eggs inside the roll and also add dried apricots. We wrapped the roll in chicken skin, with its fried crust, it looks even more appetizing. Chicken eggs can be replaced with quail eggs, you can experiment with the filling. Crab sticks can be replaced with champignons, and dried apricots with prunes.

Ingredients

  • chicken fillet(breast) 700 g;
  • homemade minced meat (pork and beef) 200 g;
  • chicken skin (if available);
  • boiled carrots 1 pc.;
  • chilled crab sticks 3 pcs.;
  • eggs 3 pcs.;
  • dried apricots 5 pcs.;
  • mixture of herbs (spices for chicken) 1 tsp;
  • sea ​​salt 1 tsp;
  • ground black and hot peppers taste;
  • honey 1.5 tsp;
  • soy sauce 2 tbsp. l.;
  • garlic 2 cloves;
  • fresh herbs for serving the roll;
  • mustard 1 tbsp. l.;
  • baked potatoes for garnish.

Preparation

To prepare such a roll, it is better to use fillet of a large bird. I took fillet of a domestic broiler cockerel. If you have small fillets, take several pieces.


Grind the minced meat for the roll in a meat grinder, or buy it ready-made in the store. You can add finely chopped onion.


Using a sharp knife, cut the chicken fillet, but not all the way. You should have the appearance of an open book.


To form the main layer for the roll, place the prepared fillet between two layers of cling film. Beat it on both sides with a kitchen hammer. The film helps preserve all the pieces of fillet, and the board and hammer remain clean.


Remove the top layer of film, sprinkle the poultry meat with spices and salt.


Spread the homemade minced meat over the fillets and compact lightly.


Place thin slices of boiled carrots and unwrapped crab sticks on the minced meat. You can use a vegetable peeler to cut carrots. This will make it very thin.


Pre-boil small chicken eggs for 6 minutes. Soak the eggs in cold water and peel off the shell. Place whole boiled eggs on a layer of crab sticks.


Soak the dried apricots in advance in orange juice or just warm water, place near the chicken eggs.


Tightly roll the fillet with the filling and tie it tightly with thread.


If you happen to have chicken skin or thin strips of smoked or lightly salted bacon in the refrigerator, wrap them around the roll. When baking, the fatty upper layer will create a beautiful color and add juiciness.


Wrap the meatloaf with boiled eggs in cling film.


Wrap with foil or parchment paper and secure with string. Preheat the oven to 180 degrees and place the meatloaf in it for 20 minutes.


Carefully unfold the half-finished dish, making a cut in the parchment at the top. Remove the cling film and pour the released meat juice into a bowl. Place the roll back in the oven for another 20 minutes. Next to the baking sheet you can add baked vegetables for a side dish, for example, potatoes.


Combine meat juice in a bowl with soy sauce, honey and finely grated garlic. Add mustard and move around. Dip a brush into this sauce and coat the roll every 5-7 minutes. It will begin to brown and acquire a beautiful color and crust. You can determine readiness by piercing it with a skewer. The flowing juice should be clear. When the dish is completely ready, turn off the oven and leave the roll for 30-40 minutes.


Place fresh herbs on an oval plate.


Place the meatloaf in the center of the dish. You can place the vegetable side dish next to the roll or serve it separately.

You don't have to use chicken to make meatloaf with an egg inside. You can use duck breast or turkey fillet instead. You can also use pork loin, but in this case it is better to replace the minced pork with chicken. If your family loves baked cheese, you can add it to the recipe. To do this, 15-20 minutes before readiness, sprinkle the roll with grated cheese.

Before serving the roll, you can cut it with a thin knife. But this should be done immediately before the meal so that the meat does not have time to dry out.

Stuffed roll is perfect as a snack for festive table and as a main dish with a vegetable side dish, and it’s easier to prepare than cutlets! I really love and respect those dishes that don’t need to be fried, I’m all for healthy eating! 😉 Therefore, meatloaf according to this recipe is perfect for children's and diet food.

For the recipe for baked meatloaf with eggs you will need:

  • Minced meat (I have mixed pork and beef, it will also be delicious with chicken) - 800 g,
  • onions – 1-2 pcs.,
  • 2 raw minced eggs,
  • 2 slices of loaf (soaked in milk),
  • 2 spoons of sour cream (for the juiciness of the minced meat),
  • pepper,
  • salt - to taste,
  • 3-4 boiled eggs for filling.

Recipe baked meatloaf from minced meat and eggs

I prepared minced meat for a stuffed roll filled with boiled eggs from lean pieces of pork and beef, 400 grams of each meat (if you replace them with lamb, chicken breasts, or maybe make minced meat from fish fillets, it will be very original for taste!). We pass the meat together with the onion through a meat grinder, soak bread or loaf without crusts in milk or water, since I took lean meat, I will add a couple of spoons of sour cream to the minced meat in addition to eggs and slices of loaf, in order to make it juicy.

Mix the prepared minced meat for the roll well, you can even beat it.

You can simply form a roll on a greased vegetable oil table, or you can use foil or cling film for this:

Place the minced meat in an oblong layer on the table,

Place boiled eggs along the center

(if desired, you can diversify the taste of the stuffed meatloaf - place eggs on fried onions or mushrooms, for example, champignons), chicken eggs in the roll can be replaced with quail ones.

Use the edges of a layer of raw minced meat to cover the eggs and form a roll; to prevent it from falling apart during baking, you can turn it over with the seam down and on top (required!!!) make 4 holes with your finger to allow steam and excess liquid to escape.

A minced meat roll filled with eggs can be baked in a deep baking dish, greased with butter, and then you will not need to add broth or water, it will cook in its own juices and turn out juicy.

If you bake a stuffed roll on a baking sheet, be sure to add water, a little, so that the surface of the greased baking sheet is lightly covered with liquid. A minced meat roll according to this recipe can be baked in a sleeve or foil; the baking time for the roll is 50 minutes at a temperature of 180 degrees. During baking, the stuffed roll will need to be basted several times with the released juice in order for it to get a beautiful golden brown crust, as in the photo:

  • 200 gr. hard cheese
  • For meatloaf, we use any minced meat; the most delicious roll is made from mixed minced meat (pork + beef).
  • Add two eggs to the minced meat and grate the onion on a fine grater. Salt and pepper.
  • Mix the minced meat very well. Taste for salt and spices. Make the minced meat sufficiently salty and spicy; you can add your favorite spices.
  • You can make any filling for the meatloaf, the simplest one is just boiled eggs, the more complex one is to add vegetables and cheese in addition to the eggs.
  • So, boil hard-boiled eggs. One egg roll requires 3 boiled eggs.
  • An important point: vegetables must be boiled. You can cook carrots and potatoes in advance.
  • If you decide to add salad pepper to the filling, as in my photo, then cut the pepper into long thick strips, which we fry over low heat until tender.
  • The pepper should become soft. It is better to remove the peeled peel. You can use canned salad peppers; there is no need to fry them.
  • That's all the preparatory operations, now you can proceed directly to preparing our meatloaf. Moreover, you can prepare the roll in two ways, I will describe both methods, and you will choose the one you like best.
  • Minced meat roll baked in the oven on a baking sheet

  • This is a classic scheme, used for cold and hot rolls, when the roll is rolled in the literal sense of the word. For this we need a bamboo mat, which is used for rolling sushi.
  • We cover the mat with cling film to protect the mat itself, and the minced meat comes off the plastic more easily.
  • Distribute the minced meat evenly to form a rectangle. The layer of minced meat should not be very thin, otherwise it will tear when folded.
  • Not far from the near edge, place halves of boiled eggs, boiled carrots cut lengthwise, and potatoes cut into large strips.
  • Place strips of lettuce pepper. It turns out very beautiful if you use red and green peppers.
  • Place cheese on top of vegetables. I recommend grating the cheese, so during cooking the cheese melts and flows between the vegetables, thereby combining the filling. Since I only had cheese in slices in the refrigerator, I simply rolled it up.
  • Carefully roll up the roll (do not forget to remove the plastic in a timely manner).
  • Transfer the rolled minced meat roll to a baking sheet and place in a well-heated oven. Bake the roll for 45-50 minutes at 220°C.
  • We check readiness with a metal pin (knitting needle). If after piercing red ichor flows out, then the roll is not ready yet. If the puncture site remains dry, the roll is ready. By the way, one of the signs that the meatloaf is ready is the flow of melted cheese.
  • When the roll has cooled a little, transfer it to a cutting board. If we plan to serve the minced meat roll hot, then we cut it quite thick. For a cold appetizer, cut the meatloaf thinly just before serving. It’s clear that we choose a sharp knife.
  • Egg roll baked in a pan

  • This is the simplest and quick way preparing minced meat roll. You don’t need to fold anything, you don’t need experience or patience))).
  • So, we take a rectangular shape, preferably with a special coating. Generously grease the pan with margarine and sprinkle breadcrumbs on top. Thanks to this little trick, the roll comes out of the mold easier.
  • Place one third of the prepared minced meat on the bottom of the mold. We spread the filling in a heap along the form. It is advisable to put cheese on top.
  • We cover the filling with the remaining minced meat on top and sides so that the filling is inside the minced meat. Press the minced meat tightly.
  • Place the meatloaf pan in the preheated oven and bake until done. Time and temperature regime the same as in the first case.
  • The cut shows how appetizing and how beautiful the minced meat roll turns out. Eggs, carrots, peppers, potatoes and even cheese are clearly visible. By appearance This roll is no worse than one cooked on a baking sheet.
  • I also recommend trying the minced meat roll with cheese, baked in bacon. An amazing dish, beautiful and very tasty!

Hi all. As a change, instead of making regular cutlets, you can make meatloaf. A minced meat roll with an egg is prepared in the oven; it holds its shape well, does not fall apart, and will also serve as a wonderful decoration for any holiday table.

I am posting a simple recipe with photos. Basically, many people prepare a minced meat roll with an egg inside, but instead of eggs you can use any other filling - it could be mushrooms, spinach - basically, whatever you want.

We will need:

0.5 kg. minced meat

1 onion

2 small loaves of white loaf

salt, pepper - to taste

vegetable oil

First of all, we need to hard boil the eggs. This is if you chose eggs as the filling for the roll, and not something else.

While the eggs are boiling (by the way, quail is also suitable), we make minced meat, I usually cook it like cutlets, nothing special. I grind the meat with onions and garlic in a meat grinder, add squeezed stale bread, pre-soaked in water, salt, pepper and add one raw egg. I mix everything thoroughly.

Peel the onion and chop it finely. Add to the minced meat and mix everything again.

Take a baking dish and cover it with foil. Grease the foil evenly with vegetable oil. For meatloaf, I advise you to use a rectangular baking sheet. Next, put our minced meat on the foil and distribute it over the entire surface of the baking sheet so that we get a rectangle. Place peeled boiled eggs in a row on top of the center of the minced meat. Even before this, I put chopped greens in the middle for beauty.

Now with the help foil, roll the minced meat into a roll. First we bend it from one side to the middle, then overlap it on the other. We leave the seam on top so that the juice does not come out, but remains inside. We also pinch the edges on both sides. See photo.

Then we wrap it completely everything is in foil. Bake the minced meat roll in the oven for 40 minutes at 180 degrees. Next, open the top layer of foil and continue baking for another 15-20 minutes until cooked, so that the roll acquires a golden brown crust.

Minced meat roll with egg in the oven is ready! Before cutting the roll into portions, it should be cooled. It turns out to be a very tasty and beautiful dish - I recommend everyone to cook according to this recipe. Bon appetit!
